UMA, meaning "farm" in Filipino, is South Palms Panglao - MGallery's progressive Filipino restaurant, built on direct sourcing from its own farm.

Herbs, fruits, and vegetables, including lemongrass, are grown and harvested in its own garden within the property. The signature experience is the Build Your Own Boodle Fight, the traditional communal Filipino feast of grilled seafood, tropical fruit, and farm vegetables served on banana leaves. The kitchen pairs this with cold-pressed juices and an interactive bar cart showcasing Philippine craft spirits, extending the same locally rooted philosophy to drinks.
