Restaurante Pabú

Pabú is the personal project of chef Coco Montes, who trained mainly at L'Arpège, a three-Michelin-starred restaurant in Paris.

The focus is set on the vegetable world, although we also include meat, poultry, fish and seafood when they are of extraordinary quality.

The menu changes every day. It is composed of nine dishes that can be ordered as a as a full tasting menu or as an “a la carte” selection and it does not have to be ordered for an entire table.

Ingredients are sourced daily, there are products we work with in our kitchen that exist for just a few weeks and others that last a few days. The goal is to seek the highest possible quality and share it with our guests.

At Pabú they have an extensive wine list with approximately two hundred references of still wine and forty within the AOC Champagne. They have a great passion for wines and for all those projects and winemakers who take care of their land.

They are focused on offering our guests an amazing experience, making sure the kitchen and front of the house teams work together in perfect harmony. Hospitality at it’s purest.
