Since the arrival of Alain Ducasse at the restaurant of the Hôtel de Paris, he has made innovation a tradition. With Emmanuel Pilon at the helm of the kitchens of Le Louis XV - Alain Ducasse, a new chapter opens in this contemporary haute cuisine which, for thirty-five years, has made Monaco one of the greatest gastronomic destinations in the world.
The restaurant claims the freedom to invent new Mediterranean flavors, faithful to this region, its products, and its artisan producers. Inspired by the spirit of Naturalité, this philosophy is expressed both through the original technique of cooking over fire where a whole fish or piece of meat is grilled, and through long and complex preparations that enhance the flavor of the products.
