Conceptualised in 2022 by Chef Callan Austin and Darren Badenhorst, DUSK was created to push the boundaries of fine dining and disrupt the traditional mould, offering something fresh, bold, and unlike anything else on the South African dining scene. It is now one of the country’s most celebrated culinary destinations.

Chef Callan Austin leads with a bold and creative culinary vision. His menus are built around storytelling, nostalgic memories from his childhood, subtle social and political commentary, and a sense of mischief that adds charm and depth. While inventive, the food is always rooted in bold, expressive flavour.

DUSK offers two seasonal tasting menus, both showcasing the restaurant’s evolving philosophy and commitment to quality, local produce. Menus shift frequently to reflect the rhythm of the seasons and Callan’s ongoing creative exploration.

The experience is complemented by a world-class wine and beverage list curated by Head Sommelier George Young, designed to enhance and personalise each guest’s journey.
